Crafted predominantly from the premium Pommard clone grown on our estate vineyards, this Pinot Noir is designed around exceptional quality and pigment. Because Pinot Noir is naturally light-skinned and low-tannin, the winemaker includes $25\%$ whole clusters (stems included) during de-stemming to add nuanced flavors and structural tannins. The grapes undergo a 3-day cold soak at $32^\circ\text{F}$ in our cold room to reduce biological load before being warmed up and fermented. It is gently punched down by hand (never pumped over) and aged for 18 months in barrels (20% to 25% new French oak). Smooth, elegant, low in harsh tannins, and beautifully ready to drink right now.
